liminal_space1. tucker carlson, gone: he is the blood sacrifice fox was required to make, i guess. maybe he and alex jones can have a pity party together. (so i sort of actually think carlson may not be a total douchebag -- he just played one on shock tv. then again, for love nor money would my conscience allow me to say some of the things he has said.)
2. we MIGHT be putting an offer in on a lakefront property. the plan would be to update it with loads of elbow grease and manual labor and when it's nice and pretty rent it out after we find or build our lady farmer horse property. it's on 3.5 acres so i could probably get chickens and i for sure can garden and maybe put a mini orchard in, but horses will have to wait. :( i think we can really make it cute and HOPE this is a sound decision. if we get it, that is: we're going in sort of low ball so that it makes more sense as an investment property. we'll see!
3. kid has two weeks left of college classes and then will have a 1 month break before summer session. i'm so proud of her, but she's having some pretty serious anxiety issues right now and i can't help but worry. bless her little golden soul.
4. mister's classes all got approved and paid for, so he's enrolled in whatever it is to become whatever it is he's going to be. yay!
5. i made a new recipe a few days ago for school lunch that the kid LOVED. i mean L O V E D. i basically took refried beans, jazzed them up, lined muffin tins with crescent rolls, plopped in the beans, added cheese, and baked. she was bugging me to make more so i did it for dinner last night and doubled the recipe -- sort of -- and did some with meat in them for mister and i. i say sort of because there are 8 rolls per pkg, but i mangled enough so that i could only make twelve. *sigh* i also made a brookie (brownie! cookie!) and everyone liked it, but there's soooooo much that i need to freeze 3/4s of it so we don't eat it all.
6. we're having people over tomorrow. :) this means i will have to do a deep clean (ick) but will benefit from a sparkling house. *nod*
7. OH!!! and i bought this to replace my vintage fiestaware creamer pitcher that mister broke:
it's a temporary thing until i can find a replacement fiestaware piece, but it's so cute i can't stand it. CAN NOT STAND.

i LOVE the little pitcher and have used it most every day. :)

5. What did you do to the beans?

added 1/2 small can of diced green chiles; 1/4 cup of very finely chopped white onion; some chili powder, garlic powder, a bit of cumin, and some caldo de tomate (from knorr...it's amazing and wonderful, but has msg so i'm pretty careful with it). i stirred it all together, and popped it in the crescent cups, topped with cheese and cooked.
last night i made them again, and this time i added just a little bit of cheese to the cup before the beans and added some olives to the top and cooked. she loved these, too.
