~ about a year and a half ago, i watched a korean vlogger use a dark, odd looking cheese on her coffee. o.O she then proceeded to put it on a piece of bread along with apples, crushed nuts, and honey.

i was FASCINATED and decided that i probably was going to die if i didn't find that cheese and try it. FINDING the cheese ended up being the issue. i was bemoaning this fact to the mister yesterday while we were in the grocery store (we had to go get her irrigation device, so stopped for a shop) and he asked what the cheese was called and what it looked like.

i pulled it up on the trusty google machine and showed him:

norwegian breakfast cheese.

norwegian breakfast cheese.

"it's not easy to find though," i told him. "i've been looking for ages." then started bitching about how, in a state that prides itself on cheese, exotic cheeses are too hard to find.

he stopped my chatter and there, at a grocery store i've been in at least a hundred times, in front of a cheese display i have scoured at least as many....he found it.

he SWEARS it's been there all along, but i don't think so.

anyway, the upshot is it's a FASCINATING cheese and if you can find it? you should get it. if you like cheese. and caramel.

i know it SOUNDS like it shouldn't work, but it does.

on a thin slice of my cranberry bread, i shredded a bit of the gjetost (that's what it's called....pronounced ya toast, which makes me happy), made myself a cup of white tea, and found myself in cheese toast heaven.

today my snack is the same thing, but with some thinly sliced apples on it. i'm not yet brave enough to put it on a latte, but who knows?

~ the weather here continues to be cold. my smartwatch's display shows the temperature, but i haven't changed the location since we've moved and it still shows tehachapi. o.O THOSE temperatures make for bikini weather. THESE temperatures make for randy of "i can't put my arms down" fame.

horse is SUPPOSED to come on sunday (-10 the high) and i'm freaking out that the cold and change will give her colic. people reassure me that's not going to happen, but i worry. i'd still worry if she was a $$$$ horse but she's a $$$$$ horse and i swear, we should get insurance. [15 minutes later — i sent mister info on the horse insurance we should get...even though it doesn't cover chiro work. YES, MY HORSES GET CHIROPRACTIC WORK AND IT *IS* SORT OF BOUGIE AND EMBARASSING, BUT "HEALTHY AS A HORSE" TAKES A LOT OF WORK.]

ahem.

~ tomorrow kid and i are getting out of the house and heading to town, dang it. we need to do some thrifting and earring shopping.

oh, speaking of earrings....two nights ago i yoinked my nose ring out while drying off after my shower. i was able to get it back in and am pretty chuffed with myself. =D

desire

My desire
is always the same; wherever Life
deposits me:
I want to stick my toe
& soon my whole body
into the water.
I want to shake out a fat broom
& sweep dried leaves
bruised blossoms
dead insects
& dust.
I want to grow
something.
It seems impossible that desire
can sometimes transform into devotion;
but this has happened.
And that is how I've survived:
how the hole
I carefully tended
in the garden of my heart
grew a heart
to fill it.

Wow that sounds intriguing. I don't like caramel, personally, so I would probably pass on trying it.

I adore getost! We used to live in Bergen in Norway and we were so happy that we can still get it over here in the UK. It’s so delicious! It’s best sliced really thinly as it then melts in your mouth.

it’s really nice with pears. I just love it on a really good rye bread or pumpernickel bread.

her "this is a workout!" potato masher? lol i've been hunting for one of the tea steepers she uses and finally found it. the cost of the item wasn't HORRID, but the shipping made it too much. :( also, her "everyday" plates and bowls with writing on them? I found them finally and am going to buy myself a few things.

I've made fudge with Velveeta so I would try caramel cheese

i've never heard of Velveeta in fudge! was it tasty?

It wasn't the greatest fudge I'd ever had, but it was far from bad. The Velveeta kind of recedes way into the background, behind the sugar and cocoa powder, and becomes just a slightly tangy ghost of cheese. Sort of like cheesecake or any other sweet made with cream cheese.

For years I've wanted to try Torta del Casar which is a Spanish sheep's milk cheese but I've never been able to find it despite living in SF Bay area foodie country. Maybe you can only get it in Spain.
