this is my "wtf?" face
Jan. 30th, 2025 11:12 am+ now misty is not getting here until friday. why? the transporter we secured for yesterday had trailer issues, so he couldn't get her here until he either gets things fixed or finds another open trailer. by the time we found all this out, it was late in the day — so getting her here today would have taken too much maneuvering. tomorrow? we are going ourselves.
i'll admit to a little trepidation, but we can do this. *nod*
+ the fires in CA are — mostly — contained and now starts the cleanup, rebuilding, in-fighting, and craziness that goes hand in hand with a disaster like this. it's hard to grasp even the tiniest bit of what it's going to take to get things back to a semblance of order there. my guess is that a LOT of the people who lost their homes are going to be forced to sell to developers because rebuilding will just take too much time and cost too much money for them to wait it out. =\
l.a. is trying to put some things in place to mitigate that from happening, but there are just too many families that are displaced.
it's strange that i feel guilty for not being there in solidarity, but i do: it's a sharp-faced stone in my stomach that constantly pokes and prods me.
+ the fight for sourdough bread continues. i shall NOT be thwarted by this witchcraft. >.<
[note: i ruined the lining of my proofing bowl and wanted to throw everything out into the woods and set it on fire. FIRE. which i could do here without an issue, but i talked myself off the ledge.]
i am, however, MAYBE taking a break and just sticking to the bread i can make well. there's a relatively local "folk school" that will be offering a sourdough class in the fall — i'll just try to hold out until then. it's a 3 day class with some fancy baker dude who supposedly knows his business, so yeah. i'm there. there's also a flipping class on making gjetost and i would LOVE LOVE LOVE to do that, but it's over $300+ (also for 3 days) and i could buy a LOT of already made gjetost for that.
plus, i already have made farmer's cheese so i think i could do gjetost with just some basic youtube tutorials, tbh. cheese behaves as it should, while bread making is....well, magic. >.<

Date: 2025-01-31 08:36 am (UTC)I thoroughly recommend this YouTube video (https://www.youtube.com/watch?v=2FVfJTGpXnU&list=PLT5buD2eYidVvTvwG71AaG6EIGNEYoOWe) which really helped me to make sourdough. There's a link to the website with the recipe and I use the white sourdough recipe all the time with different flours (adding seeds and stuff) and it always seems to be foolproof!
I've seen how to make gjetost, but it's such a long process and so much easier to buy it LOL!

usually when i make farmer's cheese, i toss the whey in the garden. next time, i may try to make gjetost. maybe. =D

Joe Flanagan has done some instagram videos giving advise from when his house burned 4-5 years ago. Very sad when he shows how all the rental places are doing serious price gouging.
