+ it has been a chaotic few days with news that just really took the wind out of my sails. so i am taking this weekend to take care of myself with pampering and affirmations and all that shit. =D

for dinner i made a delicious curry with chickpeas, carrots, spinach, paneer, and shrimp. everyone scarfed it up, so yep. winner. i need to plan something SUPER easy for tomorrow and sunday, since i'm taking the 70+ lbs of apples i have found myself having and making apple butter, apple sauce (if i can find a zero sugar one), and apple pie filling or chutney or something like that. if you don't know, let me inform you that peeling and coring apples is one of the little house on the prairie moments i could do without. screw ma's apple preserves that glittered like the sun, i don't even like apple products that much. 


but if i don't jar it, i'll feel like i wasted an opportunity. 


ok, maybe this weekend isn't going to be as self-caring as i was hoping. meh. 


i also need to strip the porch and the hutch down so fall decorations can go up; we have friends coming next week for apple festival and i'm nothing if not a wannabe hostess.


....and normal farm chores plus getting ready for winter chores plus horse time plus plus plus...


well, hell.

for the week or so, we've periodically taken the horses out for a handwalk down the road. misty, being an ex-amish horse, has no problems; bluebelle doesn't have *problems* per se, but she's a little more watchy for sure. 



some people walk their dogs, others walk their horses. =D we've had a lot of people come out of houses to talk to us, drivers stop to say hello, etc and so on. great exposure for the girls!


tomorrow we need to clean tack (this is the first time i've seen what humidity can do to leather!) and i'm hoping we can actually ride.

tomorrow i start a 30 day accountability challenge.  i'm so lucky to have such a good group of "healthy" friends who wall want to be stronger, healthier, and --we'll admit it-- thinner. i'm going to probably post here, too — simply because the forum we're using for this is temporary.

I'm currently making apple butter too. I'm making mine in the slow-cooker. It's a good bit slower, but you stand much less chance of having it BURN if you cook it in the slow-cooker.
I wish I knew what kind most of these apples are but I don't. They were a cheapie apple I bought too many of this week.
I will wind up having to add a little apple cider vinegar to them as well as a tiny bit of brown sugar before I'm done. I had pumpkin pie spice handy so that's what I used to season it with. I also plan on a small pinch of salt since it lacks that taste.
